Simple Strawberry Mousse


I'm not sure if this is exactly the same as mum used to make, but it sure tastes like it! The flavour of ripe strawberries really comes through in this mousse, so it's best made in summer when the strawberries are at their peak. You can use this mousse to make strawberry royale, a decidedly 70's dish that i'll endeavour to make shortly.

Ingredients (serves 3)
  • 250gm punnet strawberries
  • 1/2 cup icing sugar
  • 1/2 cup thickened cream
  • 1 tbsp hot water
  • 1/2 tbsp gelatine
  • 1 egg white
  • Coconut and extra strawberries to garnish

Method:
Hull the strawberries and place in a food processor with the icing sugar and puree.

Mix the gelatine and hot water together, then add to the strawberry mixture slowly whilst continually pureeing.
Set the strawberry mixture into the fridge for half an hour.
Whisk the cream through the strawberry mixture.
Whisk the egg white until it forms stiff peaks.

Fold the egg white into the strawberry mixture.

Pour the mousse into the serving dishes.

When ready to serve, sprinkle with coconut and garnish with half a strawberry, or a strawberry fan.
