Mmmm churros. The weather has turned a little bit lately, still beautiful during the day but with the slightest nip to the evenings. And my mind is already wandering to wintry comfort foods! And i believe the definition of comfort is deep fried balls of bread, crisp on their outer and fluffy on their inner. Of course, any epicurean knows that true comfort also involves a warming bowl of melted chocolate to slather said bunuelos in.
For those who don't really know bunuelos, they are simply churros in a ball shape, or in the case of my attempt, a glob shape.
Ingredients (makes about 12)
Bunuelos
- 1/2 cup flour
- Pinch salt
- 2/3 cup flour
- 2 tsp butter
- 1/4 cup caster sugar
- 1 tsp cinnamon
- 2 eggs, lightly whisk
- Oil for frying
Chocolate Dipping Sauce
- 100gm milk chocolate
- 1/4 tsp chilli powder
- 1/3 cup full cream milk
Method
Bunuelos
Combine the water and butter in a small saucepan and bring to a boil.
Remove from heat and whisk through flour and salt.
Add eggs and whisk furiously until combined. (it may still look lumpy; don't worry)
Combine sugar and cinnamon on a plate; this is for rolling the bunuelos in
Fill a saucepan to 5cm deep with frying oil and bring to a light shimmer
To test, a piece of bread should become golden after 15 seconds in the oil.
Using a teaspoon, roughly 'quinelle' a 3cm ball of the dough into the oil.
Cook, turning, until golden brown.
Remove with a slotted spoon and roll in the sugar mixture before transferring to serving plate.
Continue until all dough is cooked.
Chocolate Dipping Sauce
Combine milk, chilli and chocolate over low heat, stirring constantly, until warm and smooth.
Pour into serving mug.
