A quick and easy Sunday night dinner, fettucini with Chilli prawns. This recipes really only takes as long as it does for the pasta to cook! I think that chilli pairs wonderfully with any seafood.
Ingredients (Serves 3)
- 500gm green prawns, shelled and deveined
- 2 long red chillis
- 3 shallots
- 2 scallions
- 1/4 cup olive oil
- 1/2 cup parsley, chopped
- 3 cloves garlic
- Salt and pepper
- 250gm packet fettucini
Method
Cook the fettucini to al dente as per packet instructionsMeanwhile, heat the oil in a frying pan over medium heat
Chop the chillis finely
Add the shallots and garlic and saute for 3 minutes
Add the chilli and saute for 1 minute.
Add the prawns and cook on each side until white
Add the scallions and salt and pepper to taste
Toss the pasta through the prawn mixture and add the parsley.
Serve hot.
