Trusty Zucchini Slice


What can one turn to when one has an abundance of eggs? The usual culprits come to mind:
  • omelette
  • quiche
  • zuchini slice
And yes, i plan on cooking them all! This zucchini slice is one of the best i've had. There's nothing fancy about it, nothing out of the ordinary. But i've cut down on the oil in the slice, and the level of flour provide a slightly cakey spongelike consistency that i like.

This may be kind of dagsville for a recipe, but its also delish! Maybe i should call it courgette frittata... :P





Ingredients


  • 500gm zucchinis
  • 2 onions
  • 100gm ham or bacon
  • 3/4 cup self raising flour
  • salt and pepper to taste
  • 4 large eggs
  • 1/3 cup rice bran oil
  • 75gm tasty cheese

Method


Preheat oven to 180 degrees
Chop the ham/bacon and onions finely
Heat 1 tbsp of the oil over medium heat in a frying pan
Add the ham and onion and cook over medium heat until well softened and beginning to brown.

Remove from the heat and set aside to cool.
Grate the zucchinis and then squeeze with your hands to remove as much excess liquid from them as possible

Combine the zucchini with the cheese, onions, bacon, flour, salt and pepper

Crack the eggs into the bowl with the remaining oil and fold through well.

Pour into a lined and greased baking tray and spread evenly

Bake for 45 minutes or until golden brown.

Leave to cool in tin then slice and serve either warm or at room temperature.

  2. Hehe, I love that it's total dagsville! :) My mum used to make zucchini slice when I was little - very nostalgic. :)
